As my local Marks And Spencers closes around 5:30 – 6:00pm my partner find a lot of the prices reduced on or around the 5pm mark. Today’s bargain is an Indian spiced tofu stir fry from their Plant Kitchen range. The usual price is £2.75 but twice reduced to 99 pence. According to the packaging label, it is marinated tofu pieces, cabbage, chickpeas and spinach with a spiced tomato and coconut sauce (masala).
Cooking is as easy as you would expect for a stir fry. Add some oil to a medium-high wok/pan, add the Tofu and Chickpeas and cook for 3-4 minutes.
Then, add the vegetables and cook for a further 2 minutes:
Add the sauce and stir until heated through.
This has to be, probably, the tastiest thing I have eaten in this range.
