Filled Wholemeal Pitta Pockets

A few days ago my partner brought home three packs of Marks & Spencers No Chic’n Chunks for the bargain price of 20 pence each. Part of M&S Plant Kitchen range, they are usually £2 per pack.



I fancied filling some Pittas with this and some salad so I pumped some olive oil spray into a pan a few times and added the pieces. Using a wooden spoon I tossed the pieces to coat them and began to cook on medium heat. After a minute or two a sprinkled some Garam Masala, Cayenne pepper and ground black pepper as I stirred. As the pieces started to dry slightly I added some Tesco Red Pepper Dressing to coat everything.



I placed the Pitta pockets in the oven for a few minutes to freshen them, sliced them in half and began filling them. Lettuce, red onion and grated carrot lined the inside before attempting to stuff the ‘chicken’ filling inside.


Some vegan mayo and sriracha sauce to finish off the excess set to the side of the plate. Tasty stuff if I do say so myself.
