Spicy Parsnip & Sweet Potato Soup

Now and again I attempt to make soup based on whatever veg is on offer as part of Lidls weekly deals. This week they had bagged parsnip for 39p and small sweet potatoes at 49p. I used to enjoy Baxters tinned spicy parsnip soup a while back and thought I might like to try my own, but admit I’m not a huge fan of Sweet Potato. A quick search on the web for the two ingredients as a soup told me they should be fine together.

I peeled a lot of parsnips and very little of the sweet potato, added an onion and a few garlic cloves. To that mix, I added some turmeric, garam masala, mild curry powder and some chopped coriander. I tossed everything into the soup maker, topped up with water and some coconut milk to thicken it slightly and pressed start. I picked the smooth setting and waited 21mins until it was done.

I’m not going to lie to myself or you but it was a bit bland. I didn’t add any vegetable stock and I probably should have. I think it could have done with some vegan butter or oil. At the end of the day, I don’t know what I’m doing, but I keep trying regardless. Lol.
